Roasted Beetroot & Goat Cheese Salad (Meal-Prep Friendly)

Ingredients:

  • 2 medium beets (roasted, peeled, sliced)
  • 1 cup baby spinach or rocket
  • 1/4 cup crumbled goat cheese (or feta)
  • 1 tbsp chopped walnuts or sunflower seeds
  • 1 tsp olive oil + 1 tsp balsamic glaze
  • Pinch of salt + pepper

Instructions:

  1. Roast beets at 200°C (400°F) for 30–40 minutes until tender. Peel & slice.
  2. Arrange spinach, beets, cheese, and nuts in a bowl.
  3. Drizzle with olive oil + balsamic. Add salt + pepper.
  4. Enjoy warm or cold — perfect for lunchboxes or a light dinner!

Healthy Tip: You can batch-roast beets ahead of time and store them in the fridge for 3–4 days.
